This is a paid converstaton written by me on behalf of Sargento®. The opinions and texts are all mine.  I was asked by Sargento® to create a Summer Sandwich recipe to share. The first thing that came to my mind was a Grilled Zucchini Sandwich! (To me, summertime means an abundance fresh veggies growing in my garden!) The way I see it, in the Summer, the quicker and easier the meal, the better!  I really don’t want to heat up the house by cooking in my kitchen, so grilling outside is my favorite method.  And since summertime is the season for sandwiches, I combined the two!

Years ago, while trying to come up with new uses for zucchini growing in our garden, I came up with this healthy, (meatless) grilled zucchini sandwich recipe.  It has become a favorite around here.

To keep mealtime preparation simple, I rely on easy recipes and ingredients that are quick and easy to use.  Because it comes pre-sliced, Sargento® Sliced Cheese is convenient and ready to use on this or just about any sandwich.  I buy my Sargento® Sliced Cheese at Smith’s!

On this Grilled Zucchini Sandwich I use Sargento® Sliced Provolone Cheese, but because there are so many varieties, you can choose your favorite. To me, a recipe is just a guide. By experimenting with different combinations, you can come up with your own favorite Summer Sandwich.  Have you ever thought about making a grilled chicken Panini and using Sargento® Sliced Tomato & Basil Jack Cheese Slices? Or a Black Forest Ham and Sargento® Sliced Aged Swiss Cheese with lettuce and tomato on an onion cheese roll? These are some of our favorites.

Sargento Provolone Natural Cheese Slices

It seems like such a simple concept, but it took me a while to learn that if I plan my meals ahead and gather the ingredients, when we’re hungry, it takes just a few minutes to get a meal on the table. That’s where the convenience of these ready-to-use, pre-sliced cheeses comes in to play! With this cheese being already sliced and ready to use, we can quickly just pack up a few ingredients to take on a spur-of-the-moment picnic!

Grilled Zucchini

I love that Sargento® Sliced Cheese is made from real, natural cheese. It’s got great flavor that adds just the right touch to just about any sandwich we can dream up!

Here’s how to make the Grilled Zucchini:

2 medium zucchini, sliced lengthwise into ¼” slices

3 T. light olive oil

½ t. minced garlic (or ¼ teaspoon garlic powder)

¼ teaspoon dried thyme

Salt and pepper, to taste

Preheat the outside grill to medium-high heat.

Meanwhile, in a small dish, whisk together the olive oil, garlic, thyme, salt and pepper. Brush the top side of the zucchini slices with the oil mixture. Place oiled side down on the grill. Brush the other side (now on top) with the mixture. Grill about 4 minutes on each side until slightly tender and the zucchini has beautiful grill marks.

Remove to a plate and allow to cool to room temperature.

To make the sauce, stir together:

¼ cup mayonnaise

1 tablespoon Dijon mustard

To assemble the sandwiches, spread the sauce on both halves of the sandwich rolls, top with fresh alfalfa sprouts, sliced tomato, a slice or two of Sargento® Sliced Provolone Cheese, (or whatever kind you choose) then the grilled zucchini. (You may need to cut the grilled zucchini to fit the size of the roll.)

Makes 4 – 6 sandwiches

I’ll let you in on a little secret. By keeping my meals simple, I have extra time to take a break, relax and snack on a slice of Sargento® Sliced Cheese. Ahhh…
