When I think of the ultimate comfort food, I think about these homemade noodles.  They are incredibly easy and so delicious!  And you know you just can’t buy noodles like these from the store.

They really don’t take much effort, and they’re very inexpensive to make.  They are perfect in homemade  Chicken Noodle Soup, or as a side dish to go with Swedish Meatballs and Gravy!  Mmmm…I’m getting hungry just thinking about them!

You probably already have all of the ingredients in your pantry!  (Except for the eggs and milk, those should be in your fridge!)  Go gather up the ingredients.  You gotta try these!  You’ll wonder how you ever lived without them!

Here’s what you’ll need:

2 c. flour

1 t. salt

2 eggs, beaten

3 T. milk (give or take)

Put salt and flour in a bowl and stir together.  In a separate bowl, beat eggs and milk with a fork.  Pour into the flour/salt mixture to make a stiff dough. (Add more milk if needed just so the dough is not dry and crumbly, but be careful not to add too much or it will become sticky.) Put the dough on a floured counter top and knead a about 10 times.  Form it into a ball and cover with a clean, damp towel and let it sit for about 30 minutes. (This is important because the dough needs to “relax” so it will be easier to roll out.)

Sprinkle the counter top with a little flour and roll the dough out to about ¼ inch thick (or less.)  Slice it into thin strips with a pizza cutter.

Now lay the noodle strips onto a clean kitchen towel.  Allow to dry about 2 hours (or they can be used right away if you need to.) To cook, sprinkle the noodles into boiling soup or broth, a few at a time, so they don’t stick together.  Boil about 8-10 minutes or until done.

These are the perfect comfort food!  You’re gonna love them!

    2. Try thes over mashed potatoes, Yummmmmy!!!i have done this for over 60 yrs. a lot of carbs for o exerting but we only have homemade ones on Thanksgiving? Try and enjoy! I new at this!

      1. I have not tried making them with water instead of milk. I think the milk helps to make them tender.

  1. These are my favorite noodles handed down from grandmother..I did invest in a noodle maker from Bed Bath & beyond.saves a lot of time rolling by hand

    1. Yes they can! They freeze beautifully. I would use them within a month or so. Just take them out of the freezer and let them sit at room temperature for 20-30 minutes before using. Good question, Linda! It’s nice to have these stashed away in the freezer for when you’re in a hurry!

    1. It really only needs to be kneaded (ha ha! needs to be kneaded!)about 10 strokes or so. I just do it by hand. It’s not worth getting out the mixer for that. They are that simple. Be sure to let the dough rest for about 30 minutes so that it has time to relax. It will roll out easier.

  2. How many servings will it make? I have 16 people coming for thanksgiving will I need to double it or will it make enough in a single batch?

    1. A single batch should easily feed about 6-8 people as a side dish. If you are having several other side dishes too, you could probably get even more servings per batch since your guest will serve up smaller portions. I would probably double the recipe though and if you have leftover, even better! Aren’t leftovers a great part of the Thanksgiving tradition? Have a Happy Thanksgiving with your friends and family!

    1. You can just allow them to air dry on paper towels or parchment paper. I would plan to keep them in freezer bags in the freezer. They don’t take long to thaw, so that way you can have them on hand for a quick meal.

  4. I make these all the time, only I add other spices such as roasted garlic powder, poultry seasoning, parsley, etc. It depends what I am using the noodles with! YUMMY!

  5. Can you use just regular flour or is this all purpose flour? I would like to use fresh ground whole wheat flour. Can’t wait to try them 🙂

    1. The fresh ground whole-wheat flour would make yummy noodles! If you’re not opposed to using some all-purpose flour, I would recommend using half whole-wheat and half all-purpose flour. I think it makes for a nicer texture.

  6. I have made these all my life, we always measured the milk with half the egg shell. I make them in the food processor, the dough will come together and make a ball. Knead a bit on a floured board and let rest. Roll out very thin. We used them for chicken and noodles.

    I’ve asked Santa for a food dehydrator this Christmas….do you think these could be dehydrated?

    1. I am not sure. I have always allowed my to air dry. It seems like the dehydrator might make them too dry and tough. Maybe try drying a few and see how they turn out when they’re cooked. (I have always saved them in a freezer bag.)

    1. If you will be using them within a day or two, go ahead and keep them in the fridge. Longer than that, I would keep them in the freezer.

  8. What else would these go good with? I am making them right now! Would they go with pasta dishes as well?

    1. I have not actually used them for Italian style pasta dishes with red sauce, although I’m sure they would be delicious. I have always used them for chicken noodle soup or Swedish meatballs (and things with gravy.) I think I would make them very thin if I was going to eat them with red sauce. They are delicious. I don’t know how you could go wrong!

    I love homemade noodles,anxious to try these they seem easier to make than other recipes. My last dumplings’ were a flop I forgot to plug in the slow cooker full of broth and they melted ,had the thickest gravy in town, so I am going back to noodles-thanks for sharing, tonights dinner for me !

    1. Hi Sonja! I have not ever used gluten free flour. But I am a firm believer in the phrase “what have I got to lose?” when it comes to trying out new recipes!   12. My grandma always made homemade noodles for the holidays when I was a child. I remember my uncle and I trying to out eat each other with them! I have always wanted to make them but was too afraid they wouldn’t turn out. I’m doing a trial run now. If they turn out good, I’m going to make them for Thanksgiving dinner in honor of my late grandmother!

  13. You said to allow the noodles to dry for two hours. Can you leave them overnight to dry or should they be placed in the refrigerator?
