Vanilla Pudding Chocolate Chip Cookies

Do any of you have a recipe that has completely hijacked an entire category in your recipe box? I As hard as it is to believe, this chocolate chip cookie recipe did that for me. Whenever I want chocolate chip cookies, I never even consider branching out. I first had these cookies when my friend brought over a plate of them one day a few years ago. For a long time her family had a Sunday afternoon tradition to make these cookies and watch Lord of the Rings after church. To this day they still call these cookies “Lembas bread”. Any Lord of the Rings fans will know that it is the bread that can sustain you for days. This recipe could sustain your hankering for cookies forever!

Vanilla Pudding Chocolate Chip Cookies

1 c. butter (softened)

3/4 c. brown sugar

1/2 c. sugar

1 large pkg. vanilla instant pudding

1 tsp. vanilla

2 eggs

1 tsp. baking soda

2 1/4 c. flour

9 oz. milk chocolate chips (the original recipe called for semi-sweet, but I’m a milk fan…)

Cream butter, sugars, pudding, and vanilla together. Add eggs and mix well. In another bowl, combine all dry ingredients and sift. Combine wet and dry ingredients until well blended. Mix in the chocolate chips. Bake at 375 for 7 to 10 min.
